Sorriso pointed pepper tartare

Remove the thyme leaves from the sprigs.

Add all ingredients in food processor: mayonnaise, thyme, capers, pepper and salt. Blend this to a mass!

Preheat the oven to 180 degrees and place 2 Sorriso pointed peppers, a cleaned shallot & garlic clove in the oven for 25 minutes.

After this, leave to cool and clean the Sorriso pointed pepper, by peeling off the skin and removing the seeds. Cut the shallot and garlic into small pieces. Finally, finely chop the Sorriso pointed peppers from the oven.

Take the other 2 Sorriso pointed peppers: remove the seeds and cut the Sorriso pointed peppers into very small cubes.

Mix the raw Sorriso pointed peppers together with the roasted Sorriso pointed peppers and shallot. Add some pepper and salt.

On the serving plates, place the cooking ring and add the Sorriso pointed pepper tartare in it. Use the masher to get the tartare as tight as possible in the ring.

Serve the thyme mayonnaise with the tartare! Serve with a sprig of thyme.
